Please note that frozen food products must only be transported using vehicles with a negative temperature of -18°C with health authorisation and ATP. This is to guarantee the maintenance of the “CHAIN OF COLD”, which is the only condition for preserving the wholesomeness of the product, as dictated by EU hygiene and health regulations.
Yes, products should always be baked in an oven previously brought to the temperatures indicated on the labels of each individual product.
In order to reduce the electricity costs associated with cooking frozen products, we recommend letting the product thaw for at least one hour before cooking, which will reduce cooking time and give you a better quality result.
If you do not have a leavening machine, it is advisable to place the products to be leavened on the baking trays in the oven, placing a plastic bag over them so as to form a sort of dome, taking care that the bag does not touch the product, and place in a place that is not excessively cold and ventilated and wait for the time indicated on the label. The moisture released by the product during thawing retained by the plastic bag will give you a satisfactory result. Under no circumstances should you use the oven chamber switched off as a leavening oven, you risk turning it into a refrigerator due to the cold given off by the products during the defrosting phase, compromising the entire leavening phase; even less so, put the product to be leavened in a barely warm oven, there is a risk of the fats contained in the product escaping, with a total decay in appearance and quality!
If you do not have suitable equipment, to check the condition of the frozen goods on delivery, it is advisable to take a carton of freshly delivered product from the highest part of the pallets, in the presence of the driver, and open it. If the product is hard and not stuck, it means that it has been transported and stored correctly, so all other products are also perfectly frozen. The above test is even more reliable when carried out on a carton of pre-frozen products.
If doughnuts or doughnuts, after being in the freezer for a few hours, become hard, it means that the thawing procedure used was not correct. For longer-lasting softness, it is advisable to take the necessary pieces from the freezer the night before, seal them in a plastic bag and leave them to thaw overnight. This procedure ensures that the moisture contained in the product is slowly reabsorbed, allowing the product to maintain the same softness as the fresh product. We strongly advise against defrosting fried food by using microwave ovens or, even worse, conventional ovens, as doing so may result in the product becoming biscuity!
